1 x Pack Angel Bay Gourmet Beef Meatballs
6 x Lebanese Bread
1 x Bunch of Celery, diced
1 Red Onion, finely sliced
1 Packet of Shelled Edamame Beans, cooked
½ a Cucumber, skin and seeds removed
¾ Cup of Plain Greek Yoghurt
2 Cloves of Garlic, pressed or minced
Handful of Mint
Salt and Pepper
Prepare the tzatziki by grating the cucumber and placing in a paper towel to drain liquid.
In a bowl add the drained grated cucumber, yoghurt, garlic, chopped mint, salt, and pepper and mix well.
Prepare hummus by topping with olive oil and Dukkah mix.
Cover both and refrigerate until ready to serve.
Cook Angel Bay Gourmet Beef Meatballs according to packet instructions.
Combine celery, red onion, edamame beans, and coriander.
Add meatballs to the salad mixture and top with olive oil, salt, and pepper.
Warm pita bread according to packet instructions.
Spread hummus mixture onto the pita bread, then top with the salad and meatballs.
Top with a generous serving of tzatziki for a delicious meal.
