Brazilian Veggie Burger

Ingredients

  • 1 x pack of Angel Bay Gourmet Veggie Burger Patties
  • Handful of Mesculn
  • Cucumber, sliced
  •  Sliced Gherkins
  • Burger buns
  • Chimichurri Sauce
  • - Small bunch of Flat Leaf Parsley
  • - 1 Tbsp Oregano
  • - 1 large Red Chilli
  • - 3 x Garlic Cloves
  • - 1 tsp Smoked Paprika
  • - 2 x large Pickled Gherkins
  • - 2 Tbsp Red Wine Vinegar
  • - Olive Oil
  • Lime and Avocado Mayo
  • - 1/2 cup Vegan Mayonnaise
  • - 1/2 large Avocado
  • - Small bunch of Coriander
  • Juice of 1 Lime

Method

  1. Combine all the Chimichurri ingredients.

  2. Combine all the Lime and Avocado mayo ingredients in a Blitzer and blitz until smooth.

  3. Cook Angel Bay patties according to the instructions on pack.

  4. Assemble your burger.
