Brunch Stack

Ingredients

  • 4 x Angel Bay Gourmet Veggie Burger Patties
  • 2 tbsp olive oil
  • 400g button mushrooms halved
  • 250g steaky bacon
  • 300g halloumi sliced
  • 1 avocado sliced
  • 150g cherry tomatoes halved
  • 4 tbsp aioli
  • 1 handful fresh parsley chopped

Serves 4

Method

  1. Thaw the veggie patties according to the instructions on the pack.
  2. Heat a film of oil on a BBQ hot plate (or in 2 frying pans) and cook the patties, mushrooms and bacon until the mushrooms are tender and the bacon cooked.
  3. Lastly add the halloumi to the hot plate and cook for a couple of minutes until golden on each side.
  4. Arrange a pattie on individual plates. Top with halloumi, avocado, bacon, mushrooms and tomato. Season with salt and pepper and then drizzle with aioli and sprinkle with chopped parsley.
  5. Serve at once.
