Mushroom and Avocado Veggie Burger

Ingredients

  • 1 x pack Angel Bay Gourmet Veggie Burger Patties
  • Avocado, smashed
  • Red Onion, sliced
  • Gherkins
  • Lettuce
  • Avocado Mayo
  • Burger Buns
  •   
  • Mushrooms
  • - 4 x large Portobello Mushrooms
  • - 1 x Onion, diced
  • - 2 Tbsp Olive Oil
  • - 1 Tbsp Tomato Puree
  • 1 tsp Garlic Powder
  • 1/2 tsp Cayenne
  • 1 tsp Smoked Paprika
  • 2 Tbsp Maple Syrup
  • 2 Tbsp Balsamic Vinegar
  • Salt and Pepper

Method

  1. Cook Angel Bay Patties according to the instructions on the pack.

  2. Thinly slice the mushrooms and put into a baking dish. Combine all the mushroom ingredients and cover the mushrooms in the sauce.

  3. Bake in oven for 45 mins at 180C. Turn a few times while cooking. Allow to rest for a few mins.

  4. Assemble the burgers.
