Caprese Veggie Burger
Angel Bay Gourmet Veggie Burger Patties
125g Fresh Mozzarella Cheese
2 x Tomatoes
1/2 Red Onion
4 x Brioche Burger Buns
4 Tbsp Basil Pesto
1 large handful fresh Basil (optional)
8 x Buttercrunch lettuce leaves
4 Tbsp Mayonnaise
Cook the Angel Bay Gourmet Veggie Burger Patties according to instructions on the packet.
Slice the mozzarella and tomatoes into rounds. Thinly slice the onion into rings.
Top the cooked burger patties with mozzarella slices and return to the oven for a further 1-2 minutes, to melt slightly.
Cut the buns in half and lightly toast. Spread the bottom halves of the buns with pesto and top with basil (if using), red onion, mozzarella topped patties, sliced tomato and lettuce.
Spread the top halves of the buns with mayonnaise and sandwich the burgers together.
